The overflow should be a tube without a tap and the fresh water drain should have a tap. So you should have 4 tubes at the bottom of your rig. The hot and cold water low point drains (with taps), the fresh water drain (with tap) and the fresh water overflow (no tap).
For the pump, I would check all of the fittings in and around the pump and make sure they're tight. Even a little bit of air getting brought in from anywhere can cause what you're seeing. Check the siphon hose as well for any issues.

I would vote overkill as well, but you've got to do what makes you feel safe. My driveway has got a decent slope to it and I always leave the RV connected to the truck when on it. Maybe you could hook it up to your truck while working on it?

Hi, I would check state laws and regulations before you set out. I found this guide, not sure how current it is: rv-roadtrips.thefuntimesguide.com/triple_towing/I noticed that Wyoming is not on the list of states where triple towing is allowed.

Hi. Please don't disconnect those critical systems. They are in place for safety reasons. They shouldn't be a draw on your battery unless they are in use. If you have to do something, then disconnect the battery terminals when you put it in storage.
Maybe I read your post wrong and you're only going to disconnect those to troubleshoot? I'd leave them connected and troubleshoot first. Are you sure your battery is good? Have you thought about going to a bank of batteries rather than just one?

My check valve is in the cabinet under the sink in the bathroom. It could be that yours is installed backwards?
