Is there a way to turn off the blue LED lights surrounding the USB ports in the ceiling over the bed? We have a 2023 DG 360REQ.

No, they are part of the outlet. Only way to shut off the blue light is to remove the outlet and unplug it, then re-install.

I did this in my patrol unit equipment, the light bothers you you might cover it with some colored tape. The tapes available in Aluminum (looks like chrome) or Duct tape, Walmart's got lots of colors.
