Not much experience with below freezing camping.
I have taken care if the pipes and the fresh water tank. Placed heating pads on the grey and black tanks and have a jug of antifreeze to pour into them if needed.
What do I do with the hot water tank........ do I drain it and just heat water on the gas stove or is the heater OK to turn on and heat once a day for a shower, or will it freeze up when not in use.

Turn it on and leave it on. It will only waste a small amount of fuel when water isn't being used. Only the heat radiating out of the heater is the waste, and the portion that is inside isn't waste since it is helping warm the trailer.

So if your in sub freezing run the RV off the fresh tank and pump. Fill the tank when needed, disconnect and drain the hose until you need it again. Abilene TX early this year hyway shut down due to and ice storm.
