I know there are a lot of factors involved but curious to hear what your average brake controller settings is. So RV size and brake setting.

Ok then. 2013 Sierra 2500HD Duramax. Pulling a 2021 Durango D250RES weighing in around 8400 lbs. Truck has factory GM brake controller which goes to 10.0. Just the trailer I have it at 6.5. If I’m hauling the boat adding 2500 lbs I bump it to 8.5-9 depending on terrain. Truck also has an “engine brake” feature.

Will vary depending on load and individual brake controller's interface to the braking system. Using a F350 dually with Ford's factory braking unit, I tow a 15k fiver with electric brakes, a 16 ft enclosed trailer with electrics and a 14k boat with electric over hydraulic discs. I try to set the controller so that the trailer does not tug on the truck when brakes are applied i.e. I want the truck to stop the truck and the trailer to stop the trailer. Settings vary from 3.5 to 6.5. Too little and it is hard to stop, too much and you lock up the trailer...neither is good. Happy trails!

I try to set the controller so that the trailer does not tug on the truck when brakes are applied i.e. I want the truck to stop the truck and the trailer to stop the trailer. This is the correct answer, there are no two trailers and tow vehicles exactly alike. Your truck owners manual will give you most of the information that you need, you will fine tune the controller till the braking becomes "invisible" and the stopping feels much the same whether towing or not.

From 9.5 to 5 after I installed disc brakes, the entire combination stops now.

I completely agree, your trailer should be capable of stopping itself, while your tow vehicle handles itself.

I set mine by using just the trailer brakes manually at about 5mph. Then set the controller to that setting. You want it to stop the trailer and truck but not to the point where the trailer wheels lock up. When set correctly, you don't even know the trailer brakes are there. No drag by the trailer and no extra pressure applied to the truck brakes. Takes a while to set it up, but when you are done, you'll feel the difference. Nice smooth stops.
