I am considering installing a battery shut off switch to cut all power to the trailer when not at the trailer when boondocking.
However I have been advised my Norcold fridge (2 way ..electric and gas) will not operate without 12v battery power.
This means the cut off switch to prevent unnecessary drain on the batteries cant be installed if you require the fridge to still operate , even on gas.
Has anyone come across this? Is there a work around to keep the fridge operational somehow?

If you can isolate the 12v circuit to the refrigerator, and if it's on it's own separate circuit, then it would be simple enough to separate it and place a switch in line for everything else. Otherwise, the only feasible way to keep the fridge working while cutting off everything else would be to run a new, isolated 12v circuit from the battery to the refrigerator.

Sounds a good idea Jay. It may be a bit beyond my technical skills. I would not want to bypass the fuse box or confuse the 110v wires with the 12v wires. I will open the electrical fuse, inverter box and see what I can see. But this is great, even if I cant myself do the change, it gives me info to tell the RV technician what I require when I get the RV in the shop.

If you have a volt/ohm meter it would be easy enough to verify and isolate each circuit. Just make sure all your power is on so you can tell whether it’s 120vac or 12vdc. If you don’t have one they have inexpensive ones at almost any home improvement or automotive store. Good luck!

Are you sure the fridge is off with the battery cut out? Cut the power and see if that doesn't still run on gas with the switch off, the 12v draws minimal.

Edd is right. The only 12v draw should be the igniter, the light, and any display that may be on the front, so it is very minimal.
