I have a 2013 e196s and the trailer does not have a tank level indication. Has anyone installed and aftermarket one to show the levels? Also, what is the best way to tell how full the gray tank is full? Any help would be appreciated.

My 2 cents. I have the same trailer and for dry camping, I just monitor how much water I'm putting into the fresh water tank. (an empty fresh tank means it's all in the holding tanks) If I have to re-fill, I'll dump the gray via portable tank, pretty soon afterwards. Black, I don't worry about so much , we don't use the bathroom other than for the "during the night" bathroom breaks for the kids. We dump the black when we leave.
If I'm hooked up to a constant water source then I'll dump the tanks into the portable every 2/3 days. If you buy a portable tank, make sure it has a hitch attachment so you can pull it with your TV, should you be a ways away from a dump station. Those things can be pretty heavy. (ask me how I know)
Fresh water tank is 20 Gal. Gray / Black tanks are 32.
FYI I see a ton of people on here complaining about their tank indicators being useless and inaccurate. I hear most saying the sensors get pretty dirty and "scummy" - more so in the black tank. If I'm being honest, I think I'd like to have one anyway just in case I get lazy and forget how much water I've been using. It might be interesting to look at it and then contemplate "is it right?"
Again, my 2 cents.

My 196 had the sensors in each tank just no monitor panel. Stupid I know. I purchased the panel that came with the wiring harness on ebay. Then I purchased some wire at Home Depot so I could reach the tanks and wired it up. Works great!

I'm very interested in doing this myself on our Escape 170 Thanks Vic
