Replace dining table with desk?

We would rather have a desk in our 2019 DG 356rlt than the current dining table and now see that the 2020 model offers this as a "full timers" option.

I have reached out to KZ to see if I can purchase something like this from them, but haven't heard back yet.

Any of you guys here ever entertain doing something like this?
