White Chicken Chili
Base recipe: 3 cans Great Northern White Beans 8 oz pepper jack cheese (do NOT grab pepper jack with jabanero!) 16 oz of your favorite salsa 1 roasted chicken, we prefer a "plain" or mildly seasoned bird
Dump the beans, undrained, and the salsa into a crock pot. While that's heating, cut up the cheese, then dump that in. While all that's heating up, bone the chicken and shred it. Skin or no skin, your choice. Easy to split up and freeze. Just put in a pot and heat up. I prefer stovetop heating, but I've nuked it, too. Wife doesn't like a lot of chicken, so we don't use the whole bird.
If you're cooking for a gang, just double it up; makes a full 6+ qts. When we do a double, we get a Costco bird, since they're bigger, and use the whole thing. It's only about a third larger, so the ratio is just about right for the wife.
