When I park the trailer I want there to be no power running to it from the battery. I thought the switch on the ceiling did this but I flipped it off and the CD player and lights still had power.
Is there a way to turn off any draw from the battery besides disconnecting it?
Also what does that switch on the ceiling do?

Does your RV have a battery disconnect switch on it? If it doesn't, you could add a disconnect switch.
Otherwise, the only way to be sure would be to physically disconnect the battery.
I'm not familiar with the Coyote trailer or the switch on the ceiling you are referring to.

Add a switch near the battery. This is what I use: Blue SeaDon't get the cheap ones that look like a red plastic key, they corrode inside.

On my 5er, it's mounted near the battery. Does your manual give any indication where it is or what it looks like?

There is a drawing of it. But nothing about where. I'll take a look this weekend
